The world’s best brownies

browniesEvery year this time my husband bakes goodies for the various people he works with or his Toastmasters clubs’ holiday events. I’m always happy he leaves some for me. One of our favorite recipes is Double Chocolate Brownies with Dried Cranberries. The cranberries and pecans add a tasty surprise.

Because this is a busy time for sweet making I thought you might enjoy the recipe. I don’t know where the recipe came from, so I’m sorry I can’t attribute the creator.

• 3 ounces of unsweetened chocolate
• ½ cup of butter, cut in pieces
• 2 cups firmly packed brown sugar
• 2 eggs
• 1 cup flour
• 1 tsp vanilla
• 1 cup semi-sweet chocolate chips
• 1 cup coarsely chopped pecans
• ¾ cup dried cranberries – we prefer the ones sweetened by apple juice rather than sugar

1. Melt the chocolate and butter together in a double boiler or in a thick bottomed pan set over very low heat. When the chocolate has almost melted remove from heat and stir.

2. Combine the brown sugar and eggs. Beat until light in color.

3. Add the chocolate-butter mixture slowly to the sugar mixture, beating until well combined. Add the flour slowly, beating until well mixed. Add the vanilla.

4. Stir in the chocolate chips, pecans and cranberries. Spread in a greased 9 x 13 baking pan. Bake in a preheated 350 degree oven for 25 to 30 minutes. Test in several places for doneness – knife should come out clean.

5. Cool on a rack before cutting.

6. Try not to eat all of them before giving them to the intended recipients. 😉
